Ingredients

  • 2 tablespoons cooking oil (olive oil is best)
  • 1 medium to large onion, chopped
  • 2 cloves garlic, crushed (optional)
  • 2 x 440g tins of tomatoes
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon pepper
  • 1 teaspoon sugar
  • 500g packet of pasta
  • 1⁄2 cup grated cheese (optional) parmesan is very tasty
  • an extra teaspoon of salt

Extras

For a tastier and more nutritious sauce, add one or all:
1 handful of herbs (e.g. parsley,
oregano or basil), chopped
1 capsicum, chopped
1 cup mushrooms, chopped
1 carrot, grated or chopped
1 tin of beans (e.g. kidney or borlotti),
drained

Let’s get cooking

Sauce

Step 1

Pour cooking oil into a fry pan and place on the stove

Step 2

When the oil has heated up, add the chopped onion (and garlic). Stir the onions around the pan until they become soft (2-3 minutes).

Step 3

Add both tins of tomatoes (handy hint: put a knife in each tin and chop the tomatoes before putting them in the pan), the sugar, salt, pepper and any of the extra ingredients to the pan and stir until everything is well mixed.

Step 4

Bring the sauce to the boil and let it simmer gently for 15-20 minutes.

Pasta

Step 1

While the sauce is cooking, half fill a large saucepan with water and the extra teaspoon of salt. Put the lid on and place the saucepan on the stove over high heat. When the water is boiling, add the pasta. Once the water is boiling again, turn down the heat and boil until the pasta is soft (the pasta packet will tell you the amount of time this will take).

Step 2

When the pasta is cooked, drain it using a strainer

Put a serve of pasta in a bowl, add some sauce and top with grated cheese. Yum!
